Mock apple cobbler recipe

Mock apple cobbler is very much like real apple cobbler. It looks and tastes like it contains apples, but this dessert contains garden fresh zucchini.

Mock apple cobbler is very much like real apple cobbler. People will not be able to tell the difference. Besides being delicious, this cobbler is a great way to use up the abundance of zucchini from the garden. You can give your finicky eaters a healthy serving of vegetables, and they will not even know it!

4 cups all-purpose flour

2 cups granulated sugar

1/2 teaspoon salt

1-1/2 cups magarine

8 cups zucchini (peeled

and cut like apples)

2/3 cup lemon juice

1 cup additional

granulated sugar

1 teaspoon cinnamon

1/4 teaspoon ground nutmeg

Mix together the first four ingredients until crumbly and set aside. Cook the remaining ingredients until tender. The mixture will contain a lot of liquid; do not drain. Pat half of crumb mixture into a greased 9 by 13 inch pan. Bake at 375 degrees for 10 minutes. Pour on zucchini mixture. Sprinkle remaining crumb mixture on top. Sprinkle with cinnamon. Continue baking at 375 degrees for 30 minutes.
